Jenny's Super Easy, Super Delicious Chicken Tortilla Soup

Have I got a super delicious recipe for you!  It's spicy, has got layers of flavor, and is perfect for this time of year. A great way to warm up on these cold days and evenings. And did I mention that it's super duper easy?! This soup starts with a rotisserie chicken. Those store cooked rotisseries are easy to just pass by. But the key is to look at them as an ingredient rather then an 'as-is' item. They are cooked to perfection and just waiting to be a part of your fave recipe. So for this recipe go ahead and toss one in your cart along with a few cans of broth, beans, corn, some cheese, cilantro and other fixins. This last minute dinner will taste better than a restaurant! Not kidding! Aaron and I love this as a dinner along with a side salad topped with chipotle dressing and some homemade guacamole and our favorite tortilla chips! And we always have some left over to heat up for lunch the next day.

This really is such an easy soup to put together and you can adjust the spices to suit your taste. For me this is one of those committed to memory recipes. I think by the second time you make this...and I do believe there will be a second time...you will know what you like and what you may like to add to make it your own recipe.

Ok so let's get that soup on! :)

You will need:
1 store bought rotisserie chicken
2 cans black beans drained (or whatever beans you'd like)
1 can of corn drained
2 cans chicken broth
1 can RoTel diced tomatoes and green chilies
small can of diced jalapenos (optional)
1 diced medium onion
2 tablespoons minced garlic
1 tablespoon olive oil
dash crushed red pepper
1 1/2 teaspoons cumin
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 cup Sofrito ( I use Goya brand)
3 cups water

Toppings:
Shredded Cheddar Cheese (I used Tillamook sharp cheddar)
Tortilla strips
freshly chopped cilantro
...and sour cream is delicious too!

Let's get cookin'!
First, cut and shred chicken and place in a bowl. 
In a large sturdy pot, over medium high heat add your olive oil, onion, garlic, and crushed red pepper. Stir and begin cooking. 
Next, add your chicken, cumin, chili powder, and cayenne pepper. Mix well. Now add your RoTel, chicken broth, jalapenos, Sofrito, beans, corn, and water...stir well! Bring to a boil, then reduce heat and simmer about 35-40 mins uncovered. Give it a little taste...spicy enough? If not add a dash more chili powder. 

Guys! That's it! 

When ready to serve, top with shredded cheese, and tortilla strips or crushed tortilla chips. Or whatever you'd like! 

We love to have our favorite chips and Guacamole with this!
